Small edible meringue mushroom decorations, with a hint of coffee and chocolate.

Tiramisu roulade

This is my roulade take on the classic Tiramisu (one of my favourite desserts) and it has proved very popular whenever I have made it for dinner parties. Continue reading “Tiramisu roulade”

Mocha walnut loaf cake

My rich chocolate loaf cake with a kick of coffee and the crunch of fabulous walnuts: a combination that makes what I think is a perfect tea-time treat! Continue reading “Mocha walnut loaf cake”

Salted mocha Opera cake

Multiple layers of liqueur-kissed almond sponge cake, salted mocha buttercream and chocolate ganache: very much a cake for when a special treat is needed. And with elements that can all be made in advance, this becomes a matter of gentle assembly rather than frantically using a whole day or so in the kitchen! Continue reading “Salted mocha Opera cake”

Cappuccino chocolates

There is always something intensely satisfying about making chocolates, not least because you can have whatever flavours, fillings and adornments you want – and at a fraction of the cost from those you buy from the artisan chocolate shops. Continue reading “Cappuccino chocolates”

Salted caramel shortbreads

This is my take on Millionaire’s Shortbread, but slightly jazzed up: a real excuse for indulgence – but is an excuse ever needed? Continue reading “Salted caramel shortbreads”

Mocha walnut pavlova

I have not made a pavlova for a few years, but it is always lovely to re-visit an occasional bake such as this. Continue reading “Mocha walnut pavlova”

Tiramisu macarons

I adore coffee: it is up there with chocolate for me as one of my top flavours. And tiramisu is one of my favourite desserts: so why not make a macaron version of this? Continue reading “Tiramisu macarons”

Simple roasted coffee shortbread – no rolling out

Shortbread is the first thing I ever made as a young boy and I love coming back to it, either making a very traditional shortbread (what can beat that?) or a flavoured variation. Continue reading “Simple roasted coffee shortbread – no rolling out”

Roasted coffee bean butter: a great ingredient for coffee lovers

I am so excited to share this post for roasted coffee bean butter. Coffee is one of my favourite flavours, almost beating chocolate for me. This butter, which is basically freshly ground coffee beans infused with hot butter, has a very rich, deep coffee flavour that you simply cannot get close to when using either instant coffee or even freshly brewed coffee in a bake. Continue reading “Roasted coffee bean butter: a great ingredient for coffee lovers”

Mocha & salted caramel Angel food cake

This is my take on the divine Angel food cake, a cake that is like eating sweet clouds! Continue reading “Mocha & salted caramel Angel food cake”

Coffee Dacquoise with caramelised hazelnuts

I ate a stunning Dacquoise in a pâtisserie in France very recently and I couldn’t wait to put my spin on it when recreating it back home. Crisp toasted hazelnut meringue layers are sandwiched together with a truly melt-in-the-mouth coffee buttercream, and it is topped with a very simple shiny chocolate glaze. Continue reading “Coffee Dacquoise with caramelised hazelnuts”

Coffee, pecan & salted caramel truffle torte

This incredibly indulgent treat is my take on a marvellous cake I ate at a patisserie on holiday ages ago and as soon as I got home I set out to try to recreate its flavours and textures. Continue reading “Coffee, pecan & salted caramel truffle torte”

Opera Gateau: coffee, chocolate & rum flavour

The last time I made an Opera Gateau I went for layers of sponge brushed with lime syrup and rum, ginger & lemongrass buttercream and passionfruit with white chocolate ganache: this time I went for the more classic Opera Gateau using layers of coffee & rum soaked sponge, coffee buttercream and dark chocolate ganache. Continue reading “Opera Gateau: coffee, chocolate & rum flavour”

Walnut & Mocha Fancies

These are not quite those wonderful fancies using fondant icing (although fondant icing does work well here) but it is my take using a ganache coating and, for an additional coffee hit and a shiny finish, a coffee glaze. Continue reading “Walnut & Mocha Fancies”
