Sticky, smoky, spicy and not too sweet, this is my ultimate BBQ sauce.
This BBQ sauce is very quick to make – around 30 mins including preparation time – will probably vanish in as short a time as it takes to make it!
It is also great as a “pulled pork” sauce and it makes a great marinade for meats: just rub liberally over the meat of choice, cover and chill overnight ideally.
If you have a smoker you could also smoke the onions (quartered in their skins) for about 15 minutes before removing the skins and using. This adds a wonderful smokiness to the finished sauce. If not, and you crave a smoky flavour, you could use smoked garlic that you can buy – in which case I would use a whole bulb of smoked garlic!
I sometimes scale up the amount on the recipe if making a large batch, such as for gifts: simply decant the cooked sauce into hot sterilised jars and label the jars once cool.
Note: I usually make this just as it is, which retains a slight texture from the onions. However, if you prefer a very smooth sauce, chop the onion and simmer it in water until very soft beforehand.
Recipe: BBQ sauce – serves 4
- 1 large chopped onion, peeled
- 3-4 fat cloves of garlic, peeled
- 2 teaspoons dried chipotle chilli flakes
- 1 tablespoon smoked paprika
- 3 tablespoons tomato ketchup
- 2 tablespoons black treacle
- 3 tablespoons brown sugar (soft brown/dark brown/Demerara/molasses)
- 5 tablespoons white wine or cider vinegar
- 1 tablespoon dark soy sauce
(1) Put all of the ingredients into a food processor and blitz to give a fairly smooth paste. See note above recipe if you want a very smooth sauce.
(2) Simmer for 10-15 minutes over a medium heat until reduced slightly and thick. You can now cool this and serve it as a BBQ dipping sauce or for brushing over meat.
