Smoked cheese & onion pasties

Some of my favourite dishes arise from using whatever is lying around and these full-flavoured pastries do just that: with the additional use of the indoor smoker for the remains of a block of cheese and some onions… Continue reading “Smoked cheese & onion pasties”

Salted caramel pretzel rocky road

This is such an easy, no-bake treat, using mostly ingredients lying around. A real crowd-pleaser, it is packed with goodies such as chocolate pretzels, salted caramel, Kirsch-soaked cherries and the like: very rich (and rightly so!) but moreish. Continue reading “Salted caramel pretzel rocky road”

Panzanella: one of the best & quickest salads in the world. With YouTube version

Great food does not need to be at all complicated or time-consuming. Sometimes the right combination of humble ingredients can become something quite majestic; panzanella is a case in point….

Smoked ham and fennel tart: a great “left-overs” dish

I adore classic dishes and often like nothing more than to bake a true classic without embellishment. However, while clearing out the fridge and thinking how to use up what was left in there, I couldn’t pass up on the opportunity to make my twist on the brilliant Quiche Lorraine: so much for unembellishing! Crispy gingerbread cake bites

If you ever have left-over cake (“why would I?”, you might ask!), or have cake that is starting to go stale, these very easy bites will use up the cake for a delicious sweet treat. Continue reading “Crispy gingerbread cake bites”

Pork, apple & apricot pie: a left-overs feast!

This thrifty pie, made with a simple mustard-flavoured hot watercrust pastry, is packed with pork, stuffing, juicy apricots, sharp apple, a few pickled vegetables and roasted onions: left-overs from a roast dinner and store-cupboard ingredients. Continue reading “Pork, apple & apricot pie: a left-overs feast!”

Cheese, olive & tomato sourdough

This is much a “use up the left-overs” bread, using up some spiced olives (the ones normally found in the chiller cabinet at the supermarket) and the end of a block of mature Cheddar. I added some chopped sun-dried tomatoes for that wonderfully intense umami flavour you get: sun-dried tomatoes are one of my must-have store cupboard ingredients! Continue reading “Cheese, olive & tomato sourdough”

The simplest, quickest sourdough flatbreads in about 20 minutes!

When you feed a sourdough starter, you discard some of the starter so that you can top the remaining starter with more water and flour: that way you get a fairly constant volume of starter rather than having litres of it in many containers all over the place! Continue reading “The simplest, quickest sourdough flatbreads in about 20 minutes!”

Quick & easy version of the “After Dark Gü-Zillionaires’ Puddings”

This is my fairly quick, but certainly very easy version of the gorgeous After Dark Gü-Zillionaires’ Puddings: chocolatey biscuit base with layers of luscious cheesecake with a hint of treacle, salted caramel and finished with a soft dark chocolate ganache. A very naughty, but once-in-a-while treat! Continue reading “Quick & easy version of the “After Dark Gü-Zillionaires’ Puddings””
