Custard Cream biscuits

This is my take on this classic biscuit: custardy biscuits sandwiched together with a simple custard-flavoured buttercream. A real tea-time treat. Continue reading “Custard Cream biscuits”

Coconut chocolates: posh Bounty Bars!

Sweet, sticky coconut enrobed in chocolate, a Bounty Bar is one of my guilty-pleasures when it comes to commercial chocolates. This is my homemade version….. Continue reading “Coconut chocolates: posh Bounty Bars!”

Salted caramel pretzel rocky road

This is such an easy, no-bake treat, using mostly ingredients lying around. A real crowd-pleaser, it is packed with goodies such as chocolate pretzels, salted caramel, Kirsch-soaked cherries and the like: very rich (and rightly so!) but moreish. Continue reading “Salted caramel pretzel rocky road”

Coffee and walnut chocolates

My favourite flavours for a cake, but in a chocolate! Ok, these are purely for eating without shame just as they are, but they would make a fabulous adornment for a cake. Continue reading “Coffee and walnut chocolates”

5-minute cheat’s trifle

This is such a simple and quick dessert: kind of Eton Mess meets trifle. And there is no fussing about with custard: just lemon curd and cream…… Continue reading “5-minute cheat’s trifle”

All about scones: sweet and savoury!

Freshly made scones with cream and home-made curd or jam is one of life’s best food pleasures. But savoury scones are also very exciting both to make and to eat. This post gives a selection of my recipes for both sweet and savoury scones. Continue reading “All about scones: sweet and savoury!”

Salted honey tart

I adore honey and love using it in both sweet and savoury dishes. The sweetness in this very easy recipe is carefully balanced with the salt and gives a dessert that has always proved hard to resist.

Orange & coconut domes

These tangy, refreshing and very simple desserts need to be eaten with no shame whatsoever! They are great for parties, buffets, Afternoon Tea or just as a sweet treat whenever the mood takes you. Continue reading “Orange & coconut domes”

Rhubarb & ginger Battenberg cake

The power of baking in evoking happy memories of childhood is one of the many reasons baking is such an addiction for me; a Battenberg cake never fails to transport me back to being a child again, when slices of Battenberg were handed out as a real teatime treat. Continue reading “Rhubarb & ginger Battenberg cake”

Quick & easy Cherry, walnut & maple syrup pastries

These are very quick and easy treats: small sweet pastries that are crisp, buttery and wonderfully sticky: quite fabulous served with coffee or tea! Continue reading “Quick & easy Cherry, walnut & maple syrup pastries”

Smoked salted honeycomb

This is my take on honeycomb, playing up to my absolute love of salted caramel by incorporating a little smoked sea salt – an ingredient that is now readily available in supermarkets here in the UK. But made with standard sea salt, and you still have a marvellous sweet treat. Continue reading “Smoked salted honeycomb”

Tangy blackcurrant chocolates

I have such a weakness for chocolate: mass-produced chocolate often hits the spot but the exquisite ones you can buy in artisan chocolate shops are always a treat. Continue reading “Tangy blackcurrant chocolates”

Gluten-free choux pastry: mini BLT éclairs

These are great gluten-free mini bakes that highlight the fact that gluten-free food need not have the texture and flavour of cardboard or be at all boring! And these were quick to make, with a batch ready to be eaten within 1 hour. Continue reading “Gluten-free choux pastry: mini BLT éclairs”

Macaroons (as opposed to macarons!!)

A few years ago I made what was apparently a significant social faux pas in a restaurant while being served petits fours: when I referred to what I thought were macaroons the waiter, bristling with petulant superciliousness, exclaimed “they are macarons, sir”. All done with a pronunciation that could well have been from an episode of ‘Allo, ‘Allo with an accompanying roll of the eyes! Now, I am not the tallest of people to begin with but at that point I felt positively Lilliputian! Continue reading “Macaroons (as opposed to macarons!!)”
