Smoked cheese & onion pasties

Some of my favourite dishes arise from using whatever is lying around and these full-flavoured pastries do just that: with the additional use of the indoor smoker for the remains of a block of cheese and some onions… Continue reading “Smoked cheese & onion pasties”

The best carrot cake!

I am not a fan of those carrot cakes that are overly laden with spices, resulting in a cake that tastes almost medicinal. This carrot cake is gently spiced, has a very moist sponge and the most luscious melt-in-the-mouth icing that is slightly sweet with a hint of sharpness.

Smoked ham and fennel tart: a great “left-overs” dish

I adore classic dishes and often like nothing more than to bake a true classic without embellishment. However, while clearing out the fridge and thinking how to use up what was left in there, I couldn’t pass up on the opportunity to make my twist on the brilliant Quiche Lorraine: so much for unembellishing! Continue reading “Smoked ham and fennel tart: a great “left-overs” dish”

All about scones: sweet and savoury!

Freshly made scones with cream and home-made curd or jam is one of life’s best food pleasures. But savoury scones are also very exciting both to make and to eat. This post gives a selection of my recipes for both sweet and savoury scones. Continue reading “All about scones: sweet and savoury!”

Beetroot, walnut and goats’ cheese arancini

I made wild mushroom arancini during the quarter-final of Britain’s Best Home Cook, which got great comments from the judges. While that is my favourite arancini flavour, this beetroot version comes very close.

Stilton, pear & piccalilli pork pies

I loved making my ultimate pie during “pie week” on Britain’s Best Home Cook, and as expected there was much debate among us contestants (as well as among the judges) regarding whether a pie needs a bottom as well as a top…..

Personally, I am in the “I really don’t mind as long as it tastes good” camp!  Continue reading “Stilton, pear & piccalilli pork pies”

Chicken, peach and Feta salad

A good salad is hard to beat and this very simple salad, made in moments, is an immensely satisfying dish in its own right. It is also a somewhat healthy salad that doesn’t taste as if you are missing out – a bonus in my book! Continue reading “Chicken, peach and Feta salad”

Pear and Parmesan sourdough bread

Something of a resurrection has been going on in my kitchen: what I though was dead sourdough starter has now been gently nurtured back to life……

Roasted cauliflower cheese tart

If you like cauliflower cheese you really must make this tart!

I have been making this particular tart for several decades and I never tire of it, whether made as one large tart to serve at the table or made into small individual tarts. Savoury comfort food at its best, this tart is perfect served hot with a salad, and whenever I serve it, it always goes down well. Continue reading “Roasted cauliflower cheese tart”

Croissant-wrapped sausage rolls (croissage rolls!)

For me, a sausage roll is truly one of life’s simple culinary pleasures. As long as it has a generous, well-flavoured filling and a crisp, buttery pastry, I can eat one (well, several!) at any time of the day or night. Continue reading “Croissant-wrapped sausage rolls (croissage rolls!)”

Crumpets and pikelets: cheese & onion flavour

Savoury crumpets and pikelets are particularly wonderful things to eat when toasted and buttered – whether or not you then want to dress them up further with cream cheese or a poached egg or any manner of adornments. Continue reading “Crumpets and pikelets: cheese & onion flavour”

Home-made Mascarpone cheese

Using just two ingredients, Mascarpone cheese is so simple to make and tastes better than commercial Mascarpone. And it only costs about one third of the price compared to buying it.

Gorgonzola, pear & walnut cheesecake (savoury)

Whilst a sweet cheesecake can be a thing of great joy, a savoury one is often even more special for me. The flavours of Gorgonzola, pears and walnuts make a great match at any time and here the sweet juicyness of the pears with the sharp kick of balsamic vinegar work well with the rich tangyness of the cheesecake. Continue reading “Gorgonzola, pear & walnut cheesecake (savoury)”

Easy beetroot, goats’ cheese & walnut tart

This is a very simple tart that is great eaten either hot or cold and is, for me, tart that can be enjoyed at any time of the year, although it is one of my “go to” summer bakes. It can be assembled in minutes so that is is merely a matter of baking the tart. Continue reading “Easy beetroot, goats’ cheese & walnut tart”

Cheese, olive & tomato sourdough

This is much a “use up the left-overs” bread, using up some spiced olives (the ones normally found in the chiller cabinet at the supermarket) and the end of a block of mature Cheddar. I added some chopped sun-dried tomatoes for that wonderfully intense umami flavour you get: sun-dried tomatoes are one of my must-have store cupboard ingredients! Continue reading “Cheese, olive & tomato sourdough”

Home-made goats’ cheese

This is my first ever attempt at making cheese – a cheese that I only started to really enjoy a few years ago, but I absolutely adore it now and use it often in my baking. Continue reading “Home-made goats’ cheese”

Fool-proof bagels

I say fool-proof, but this is a recipe I have used for many years. I also use it when teaching how to make bagels at cookery classes and am always thrilled by the excellent results from the classes.

Local cheese & ale sourdough

A sourdough boule made from ingredients that are fairly local to me in Surrey, UK. The cheese (Spenwood) is strong and nutty; the ale (Hogs Back Brewery) is so easy to drink! They do not take over from the deep tang of the bread but they are most certainly there as complementary bedfellows! Continue reading “Local cheese & ale sourdough”

Roasted onion & smoked cheese scones (gluten-free)

Returning to my savoury roots, and it seems a while since I have posted a savoury recipe, I decided to make some cheese and onion scones, using roasted onion and smoked Cheddar cheese. Continue reading “Roasted onion & smoked cheese scones (gluten-free)”

Chouxnuts 1: cheese & chives flavour

What with cronuts, maclairs and other arguably gimmicky – but oh-so-delicious – food hybrids, I fancied seeing what would happen if I deep-fried choux pastry. I had never deep-fried choux pastry before but deep-frying here gives amazing results: these chouxnuts, as they are now known in my house, really do give a terrific doughnut effect. Continue reading “Chouxnuts 1: cheese & chives flavour”

The very best sausage rolls……..

At the risk of sounding as though I have fallen straight out of a Carry On film I will state categorically that I absolutely love a good sausage roll. One bite and everything is well with the world! Continue reading “The very best sausage rolls……..”

Pear, walnut & Gorgonzola sourdough

These full-flavoured loaves have been very much a firm favourite in our house for many years and while it is great as a non-sourdough bread, the sourdough version is seriously terrific. Of all the flavoured breads I make, this is one I make more than any other. Continue reading “Pear, walnut & Gorgonzola sourdough”
