Roasted squash, smoked chickpeas and gently warming spices give what I think is a lovely autumnal twist on hummus. Continue reading “Smoky butternut squash hummus”

Butternut squash gratin
Whether served as an accompaniment to a roast, with some slowly cooked sausages or simply eaten by itself with some bread to mop up the cheesy sauce, this gratin is real autumnal comfort food. Continue reading “Butternut squash gratin”
Coconut chocolates: posh Bounty Bars!
Sweet, sticky coconut enrobed in chocolate, a Bounty Bar is one of my guilty-pleasures when it comes to commercial chocolates. This is my homemade version….. Continue reading “Coconut chocolates: posh Bounty Bars!”
Nalli Gosht: lamb shanks in a spiced yoghurt sauce
This majestic curry, with melt-in-the-mouth spiced lamb and a thick sauce that is, quite frankly, to die for, is easy to make. It can be made a couple of days ahead, reheating gently when you are ready to eat. Continue reading “Nalli Gosht: lamb shanks in a spiced yoghurt sauce”
Coffee and walnut chocolates
My favourite flavours for a cake, but in a chocolate! Ok, these are purely for eating without shame just as they are, but they would make a fabulous adornment for a cake. Continue reading “Coffee and walnut chocolates”
The best carrot cake!
I am not a fan of those carrot cakes that are overly laden with spices, resulting in a cake that tastes almost medicinal. This carrot cake is gently spiced, has a very moist sponge and the most luscious melt-in-the-mouth icing that is slightly sweet with a hint of sharpness.
Home-made Baileys chocolates
I adore filled chocolates, and while there are some stunning chocolate shops out there, it is fun to make your own: not least as you then get to experiment with different fillings. Continue reading “Home-made Baileys chocolates”
Toasted nut chocolates
These crisp chocolate shells are filled with a rich chocolate ganache that has been blended with toasted and crushed nuts: a kind of grown-up Nutella, with a soft, melt-in-the-mouth finish. And this is a great way to use up the remains of various packets of nuts that were opened ages ago! Continue reading “Toasted nut chocolates”
Blackcurrant curd – and a video from me!
Blackcurrant curd is vibrantly coloured, intoxicatingly fragrant and tangy – and it is very simple to make. As blackcurrants are very much in season here in the UK (I am picking punnets of them every few days at the moment), I love making several batches of them. Continue reading “Blackcurrant curd – and a video from me!”
Home-made lemongrass clotted cream
Clotted cream is one of those phenomenal things that never fails to give me utter contentment. Slathered over freshly made, slightly warm scones and everything is perfect with the world! This is my quirky take on clotted cream, flavouring it with lemongrass. Continue reading “Home-made lemongrass clotted cream”
smoked sea-salted caramel chocolates
Caramel-filled chocolates are right up there among my favourite chocolates to make, so this time I used smoked sea salt to flavour the caramel. These are great to give to people as gifts or simply to munch on without guilt! Continue reading “smoked sea-salted caramel chocolates”
Rhubarb and ginger crumble cake
I always make many batches of this cake around this time of year when my rhubarb is prolific. It is a very easy cake, taking moments to “throw together” before getting baked, and it will have you coming back for another slice! Continue reading “Rhubarb and ginger crumble cake”
Easy orange shortbread
This is a very simple shortbread, flavoured with orange. The dough is made up in moments, left in the fridge to chill before being sliced thinly and baked. Continue reading “Easy orange shortbread”
Home-made Mascarpone cheese
Using just two ingredients, Mascarpone cheese is so simple to make and tastes better than commercial Mascarpone. And it only costs about one third of the price compared to buying it.
Tangy blackcurrant chocolates
I have such a weakness for chocolate: mass-produced chocolate often hits the spot but the exquisite ones you can buy in artisan chocolate shops are always a treat. Continue reading “Tangy blackcurrant chocolates”
1-minute smoked mackerel pâté
This is an insanely simple and almost instant smoked mackerel pâté that is seriously big on flavour – perfect spread liberally on hot toast or eaten with a baguette as part of a light snack. Continue reading “1-minute smoked mackerel pâté”
